Big Smoke BBQ started the way the best food always does — at home, around family, fire, and flavor.
What began as backyard cookouts and late-night recipe testing slowly turned into something bigger. Friends kept asking for “that sauce.” Family wanted bottles to take home. Before long, it was clear this wasn’t just a hobby — it was a calling.
That passion eventually made its way into the kitchen at the Culinary Institute of Virginia, where the recipe was refined, tested, and perfected. Blending formal culinary technique with real-world flavor was the turning point — transforming a backyard favorite into a sauce worthy of the label.
We set out to create a BBQ sauce that respects tradition but isn’t afraid to stand out. Something sweet, bold, and balanced, with just the right hint of heat. A sauce that works just as well on ribs and chicken as it does on tacos, burgers, or wings. A sauce that feels familiar — but hits different.
